Duck with mlinci pasta

Ingredients (for 6 persons):
A medium-sized young duck
250 g of flour
1 egg
4 tablespoons of olive oil
50 ml of milk
1 tablespoon of breadcrumbs
1. Salt the duck, add oil and roast slowly, basting it from time to time.
2. Make fresh mlinci pasta: pour hot milk with salt into flour, add oil and a beaten egg. Knead to form a dough that will be rather dense, form balls and let them rest for 30 minutes. Roll out the dough until it is roughly 5 times the thickness of regular pasta. Transfer to the oven set at 180 degrees Celsius until the ‘pasta’ dries and becomes light golden brown. When it cools down, pour hot water on it until it is rehydrated, add the fat rendered from the duck and breadcrumbs.
